12 Hour Sanitation Operator

Job Description:

Cleans heavy equipment including but not limited to fryers, conveyers, processing tables, slicers, blade knives and packaging equipment by means of spray washing and/or chemical wash. Cleans lint, dust, oil and grease from machines, overhead pipes and conveyors. Cleans screens and filters and also scrubs processing tanks and vats. Cleans rooms, hallways, rest rooms, corridors, stairways and locker rooms and other related areas. Sweeps, scrubs, waxes, spray washes and polishes floors. Empty waste bins and transports trash and waste to disposal area. Operates fork lift as well as minor lubrication and repair of equipment. Previous film (1st floor), seasoning (2nd floor) removed from the line before sanitation begins Verify that all equipment is cleaned and all cleaning material removed from the floor (including bins) Verify that equipment is set up with proper film and cases (next day schedule) At the end of the shift do the walk thru with next shift's supervisor Conduct pre-start safety and sanitation inspections per instructions and record results Conduct pre-start sanitation inspection per instructions and record results Set up and start various conveyor belts and machinery Select proper oil and oil levels to fryer Inspect, measure and record the condition of the raw material and reject out of specification product Set up and adjust slicing equipment to assure proper size of ingredients to fryers Select and record proper cooking conditions for product produced Inspect finished product, measure and record results Adjust process parameters to maintain product specifications Identify and isolate out of specification finished goods Write work orders for broken or unacceptable conditions Keep work area neat and clean and perform preliminary clean-up of equipment at shutdown Perform other work as needed per instruction Follow All GMP's Food Safety policies and procedures At the beginning of production verify the correct oil is being used, (including oil level in the fryer) Select proper cooking conditions for product scheduled to run Perform moisture and fat test every 30 min during production (+/- 10min) and at start-up of new variety and thereafter, exact time of the test must be recorded.
